Spring is here!! For me, spring means green, light recipes, outdoor eating and tangy eats. I get so excited about al the fresh goodness that comes my way this time of the year. Often times the recipes I’m enjoying in the kitchen are soaked in  citrus. Give me the limes, lemons, blood oranges, tangelos. I want it all.  I didn’t grow up with tons of citrus+ veggie parties and that’s ok. I learned to experiment on my own and in doing so, Lemony Roasted Broccoli became a thing. 

I happened to learn about the pink lemon a while ago and let me tell you! You want to try it. Not only does the pink lemon look different from classic lemons, it also has a different flavor. It is slightly sweeter than the classic lemon and has a tiny hint of grapefruit. Which is why it was perfect for my Lemony Roasted Broccoli recipe.  Limoneria is a producer of such fine lemons. Lemony Roasted Broccoli  

Ingredients

1 head of broccoli cut into florets
2 tbsp olive oil
1 tsp salt
1 tsp garlic powder
1 tsp oregano
Half cup pink lemon juice
Directions
Preheat Oven to 400
Line a sheet pan with parchment paper
In a large bowl combine broccoli, seasonings, oil and lemon juice.
Toss well to coat.
Place on sheet pan and roast for 15-20 minutes until broccoli is lightly charred and tender.
Serve and enjoy!
