One thing I will always write home about is my love of comfort food. Comfort food is what pulled me in to the kitchen. It’s how I learned to make magic happen. It’s how I show you that I love you. It’s my love language so to speak. Comfort food stretches far and wide for me. From a juicy slice of watermelon (seeds please) to a creamy bowl of chicken and noodles, the love is real. High on my list of comfort foods is a nice bowl of mashed potatoes. We just go together.

Getting in the kitchen when I’m having a really rough time is when my love of comfort food really goes into play. Enter in the mashed potato. Creamy, smoky, salty, buttery. Just dang good if you ask me. And you were asking, right? Nothing beats a great bowl of mashed taters. They are a joy at the end of a good or bad day. The recipe is fairly simple to make, and one good recipe will last you a life time. This recipe, which is an upgraded version of my base recipe. This dish can be taken up a notch even more with the addtion of some other key players-cheese, bacon, carmelized onions. The possibilites are endless. No need for the boxed kind with a great recipe in your arsenal.
In addition to being a tasty dish, whipping up mashed potaotes is a great way to get the littles inolved in the kitchen- the mashing part is so much fun!

Smoky Mashed Potatoes
Serves 4
Smoky, creamy, buttery. These mashed potatoes are the gift that screams comfort.

  1. 11/2-2 Pounds Yukon Gold Potatoes (diced) Peeling is optional.
  2. 1/2 stick Butter (diced)
  3. 1/3 cup Sour Cream
  4. 1/3 cup Milk
  5. Teaspoon Chives
  6. Teaspoon Parsley
  7. Teaspoon Smoked Paprika
  8. Salt
  9. Pepper
  1. Boil diced potatoes in salted water until just fork tender
  2. Drain and return to pot
  3. Mash slightly with a fork
  4. Season with salt, pepper, smoked paprika
  5. Stir gently to combine
  6. Add milk, sour cream, chives, butter and parsley
  7. Mash and stir until creamy and smooth.
  8. Serve and devour.
