1/2 pound fingerling potatoes
Extra Virgin Olive Oil (EVOO)
Paprika (not pictured)
Pre-heat oven to 400
Rinse potatoes thoroughly, drain and pat dry.
Slice fingerling potatoes in half and place in oven safe dish.
Arrange potatoes in a single layer.
Season with salt, pepper and paprika.
Lightly drizzle with EVOO and toss potatoes to coat
Bake in oven for 25 minutes until the inside is tender and outside is crispy.
