The cookout. It’s a celebration, usually filled with food, love and healthy fun. This has become a staple in the Black community, its somewhat a rites of passage in itself. This year to celebrate Juneteenth, I’m participating in the 2020 Juneteenth Cookout Takeover. What is the takeover? A community of 70+ bloggers, foodies and food creatives gathered together to encourage the celebration of Juneteeth. But what is Juneteenth? I’m glad you asked. 

Juneteeth is a jubilee celebration to commemorate the end of the slavery for Black Americans. It is typically celebrated on June 19, as on June 19, 1865 was the date that all enslaved Africans were free in the Unite States. Yes, that was the official date, not the date that was recorded in traditional history books. 

For over 150 years, Black American families, cooks, chefs and others in the food community pay homage to the history of our foremothers and fathers with a range of food traditions to tell the story of our people and how this soil has our blood in its roots. 

For the Cookout, I give you my Johnny Cakes with Braised Cabbage. It is hearty, it is healthy and it is comfort at its finest. It’s also budget friendly and easy to make. 

I’m determined to turn my little person into a veggie lover. Growing up, we always had a green vegetable with dinner. If we didn’t something was wrong, very wrong. That said, I’m a lover of cabbage. The tasty veggie is a staple in my home, usually made with bacon and all its glory. This time, I’m sharing an #AlmostVegan recipe. Braised Cabbage & Johnny cakes. What are JohnnyCakes you ask? Cornbread cakes. Light, Fluffy, Buttery goodness.

They take the best of using what you have to make magic in the kitchen. I love this recipe for not only its flavors, but the resourcefulness. Cabbage is inexpensive and widely available as is cornmeal. This exact meal was a Meatless Monday staple before Meatless Monday was a thing.

Braised Cabbage & Johnny Cakes

Ingredients
  1. Green Cabbage
  2. 1 Cup Cajun Trinity (1/2 diced onion, 1 celery stalk, 1/2 green bell pepper)
  3. 2 Tablespoons butter
  4. Salt
  5. Red Pepper Flake
  6. 1 Cup Water
  7. 1/3 cup Liquid Smoke
  8. JohnnyCakes
  9. Ingredients
  10. 1 & 1/4 cups of cornmeal (I’ve used White and Yellow)
  11. 1 cup of flour
  12. 1/4 cup Sugar
  13. 1 cup of milk
  14. 1 large Egg (beaten)
  15. ½ stick butter + 2 Tablespoons
  16. 1 tablespoon of baking powder
  17. ¼ teaspoon salt
Instructions
  1. Melt Butter on Medium heat in large Dutch Oven
  2. Add Cajun Trinity and saute for 3 minutes
  3. Add Cabbage and stir to combine
  4. Add Water, Liquid Smoke, Salt & Pinch of Red Pepper Flake
  5. Stir to combine
  6. Cover and Cook on Medium Low heat for 1 hour
  7. To prepare Johnny Cakes
  8. Pre-heat Shallow skillet
  9. Melt 2 Tablespoons butter
  10. In a mixing bowl, combine flour, sugar, cornmeal, milk, beaten egg, baking powder and ¼ teaspoon of salt.
  11. Mix well to combine.
  12. Just before frying, stir in melted butter.
  13. Batter will be lumpy.
  14. Pour batter into circles in heated pan
  15. Fry on on side, just until bubbling occurs
  16. Flip and fry for 2 minutes until golden brown
  17. Serve cabbage atop Johnny cake
  18. Enjoy!

    Yum yum yum! This looks so delicious. I’m also a huge fan of cabbage. I love how easy it is to cook, and how cheap it is. And most importantly I love its savory sweet taste and yummy texture 🙂 I’m a fan of Johnny cakes too, and can’t wait to try them like this!
